Grilled Halibut with Avocado & Chipotle Cream Sauce

Ingredients:

  • 4 (5 oz.) halibut filets
  • 4 tsp. fresh lemon juice, divided
  • 2 tsp. virgin olive oil
  • 1 tsp. seafood seasoning
  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 1 canned chipotle chili (plus 1 teaspoon liquid)
  • 3 sun-dried tomato halves (packed in oil)
  • 1/4 cup vegetable broth
  • 2 Tbsp. flat leaf parsley, chopped
  • lemon wedges, garnish

Instructions:

  1. Heat a grill pan (skillet with ridges) to medium heat. Sprinkle fish with 2 teaspoons lemon juice. Rub with olive oil and season with seafood seasoning.
  2. Grill fish for three minutes per side (depending upon thickness of filets).
  3. Place avocado, chipotle pepper & juice, sun-dried tomatoes and vegetable broth in blender or food processor and process until smooth.

Notes & Tips:

To serve: Place fish on a platter and spoon avocado sauce over fish. Sprinkle with parsley and serve with a lemon wedge, if desired.
