Recipe Description:

This time-saving breakfast supplies important nutrients to help get you moving and energized between meals. Eating vegetables and fruits, like fresh avocados, is associated with a reduced risk of many chronic diseases, including cardiovascular disease, and may be protective against certain types of cancers, according to the Dietary Guidelines for Americans. Just toss all the ingredients together and chill overnight in the fridge.

Ingredients:

  • 1/2 ripe, fresh avocado, halved, pitted, peeled, and diced
  • 1 small banana, sliced
  • 2 Tbsp. orange juice
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup berries (strawberries, blueberries, blackberries)
  • 1/8 tsp. ground cinnamon
  • 1/8 cup unsweetened almond milk

Instructions:

  1. Combine avocado, banana and orange juice in a small bowl.
  2. Place half of the oats in a 1 pint mason jar. Top with berries and half of the avocado mixture. Add remaining oats and sprinkle with cinnamon.
  3. Top with remaining avocado mixture.
  4. Pour in milk. Cover and chill overnight.

Notes & Tips:

Add flax seeds, chia seeds or top with your favorite nuts.
