Ingredients:
- 1 ripe, fresh avocados, halved, pitted, peeled and diced
- 1 cup orange juice
- 1/2 cup fresh lime juice
- 6 Tbsp. honey
- 1 Tbsp. Tajin spice
- 2 cups watermelon, cut into 1-inch cubes
- 2 cups cantaloupe, cut into 1-inch cubes
- 2 cups honeydew, cut into 1-inch cubes
- 2 cups strawberries or mango, sliced
- 2 cups sweet red, yellow or orange bell peppers, diced
- 2 cups cucumbers, diced
Instructions:
- Puree avocado, orange juice, lime juice and honey in a blender until smooth. Stir in Tajin spice and set aside.
- Combine fruit, cucumbers and peppers in large serving bowl. Pour dressing over salad mixture, toss gently to coat.
