Key Lime Sorbet Cupcakes

Ingredients:

  • Ingredients for the Crust

  • 1 cup almonds, previously soaked overnight
  • 5 dates, previously soaked overnight
  • 2 Tbsp. unsweetened coconut, shredded
  • 1/4 tsp. salt
  • Ingredients for the Filling

  • 2 ripe, fresh avocados, halved, pitted and peeled
  • 1/2 cup lime juice, fresh squeezed
  • 1/2 cup maple syrup
  • 2 Tbsp. coconut oil

Instructions:

  1. Mix all the ingredients for the crust in a food processor until a paste is formed and it can hold together.
  2. Fill half of the cupcake molds with the crust, pushing it into the bottom. Set aside.
  3. Mix all the ingredients for the filling in the food processor until smooth. Taste and adjust for sweetness or tartness by adding lime or syrup if necessary.
  4. Fill the other half of the cupcakes with the filling.
  5. Place cupcakes in the freezer for 3-4 hours.
  6. Take cupcakes out of freezer 5 minutes before serving. Decorate with a thin slice of fresh lime.
