Ingredients:
Ingredients for the Crust
- 1 cup almonds, previously soaked overnight
- 5 dates, previously soaked overnight
- 2 Tbsp. unsweetened coconut, shredded
- 1/4 tsp. salt
Ingredients for the Filling
- 2 ripe, fresh avocados, halved, pitted and peeled
- 1/2 cup lime juice, fresh squeezed
- 1/2 cup maple syrup
- 2 Tbsp. coconut oil
Instructions:
- Mix all the ingredients for the crust in a food processor until a paste is formed and it can hold together.
- Fill half of the cupcake molds with the crust, pushing it into the bottom. Set aside.
- Mix all the ingredients for the filling in the food processor until smooth. Taste and adjust for sweetness or tartness by adding lime or syrup if necessary.
- Fill the other half of the cupcakes with the filling.
- Place cupcakes in the freezer for 3-4 hours.
- Take cupcakes out of freezer 5 minutes before serving. Decorate with a thin slice of fresh lime.
