Ingredients:
- 1 ripe, fresh avocado, halved, pitted, peeled and cut into eight slice
- 8 soft lettuce leaves, such as Boston or Bibb
- 1/2 cup kimchi
- 1/2 cup warm rice (reheated leftovers)
Instructions:
- In the center of each lettuce leaf, arrange 1 tablespoon of rice, 1 tablespoon of kimchi and 1 slice of avocado.
- Fold lettuce over filling from every side.
