Recipe Description:

Kimchi and avocado come together for this perfect tangy, yet creamy, delicious combo, all wrapped up with rice in soft lettuce leaves.

Ingredients:

  • 1 ripe, fresh avocado, halved, pitted, peeled and cut into eight slice
  • 8 soft lettuce leaves, such as Boston or Bibb
  • 1/2 cup kimchi
  • 1/2 cup warm rice (reheated leftovers)

Instructions:

  1. In the center of each lettuce leaf, arrange 1 tablespoon of rice, 1 tablespoon of kimchi and 1 slice of avocado.
  2. Fold lettuce over filling from every side.
