Who needs a bun when you have an avo-bun? You won’t miss the bread with this Mexican inspired take on the classic egg and cheese sandwich.

Ingredients:
- 1 mashed egg
- 1 ripe, fresh avocado, halved crosswise, pitted and peeled
- 1/4 cup Mexican cheese or Cheddar cheese, shredded
- 1/4 tsp. chili powder
- 3 Tbsp. salsa
- 1 tsp. chopped cilantro
Instructions:
- Heat small non-stick skillet over medium-high heat. Cook egg to desired doneness, topping with cheese and chili powder during last 2 minutes of cooking.
- Place half of avocado on serving dish, slicing off bottom, if necessary, to make flat so avocado will stay upright. Fill in hole from avocado pit with some of the salsa. Top with egg, remaining salsa and top of avocado.
- Sprinkle with cilantro.
