Mini Carnitas Sliders with Golden Avocado Salsa

Ingredients:

  • Pork Carnitas

  • 2 lb. pork shoulder, well-trimmed of visible fat
  • 1 tsp. cumin
  • 1 tsp. paprika
  • 1 tsp. pepper
  • 1 tsp. salt
  • 1 1/2 cup chicken broth
  • 1/2 cup fresh orange juice
  • 1 jalapeño, cored, seeded chopped
  • 2 garlic cloves, crushed
  • 32 slider buns
  • Golden Avocado Salsa

  • 3 ripe, fresh avocados, halved, pitted, peeled and cut in 1/4-inch cubes
  • 2 ripe mangoes, cut in 1/4-inch cubes
  • 1/2 cup yellow peppers, diced
  • 2 Tbsp. jalapeño, minced
  • 2 Tbsp. cilantro, chopped
  • 2 Tbsp. fresh lime juice

Instructions:

  1. Combine cumin, paprika, pepper and salt. Lightly sprinkle over pork.
  2. Place pork, broth, orange juice, jalapeño and garlic in slow cooker.
  3. Cook for 8 hours on low setting or 5 to 6 hours on medium setting, until pork is cooked through and pork is very tender. Remove from crock pot.
  4. Shred pork, removing fat as needed
  5. cover and refrigerate for up to 3 days.
  6. Preheat oven to 425 degrees F. Place pork on foil-lined backing sheet. Roast for 15-20 minutes until brown and crispy.
  7. While meat is roasting, combine diced avocado, mango, yellow pepper, jalapeño, cilantro and lime juice.
  8. Remove pork, cool
  9. divide evenly between slider rolls. Top with Golden Avocado Salsa. Serve with remaining salsa.
