Traditional toasted telera bread creates a new twist on the very popular avocado toast.

Ingredients:

  • nonstick cooking oil spray
  • 6 large egg whites, beaten
  • 1/4 cup cooked black beans
  • 1/4 cup tomato, diced and seeded
  • 2 Tbsp. queso fresco, crumbled
  • 1/4 tsp. ground black pepper
  • 4 slices telera-style bread, toasted
  • 1 ripe, fresh avocado, halved, pitted, peeled and thinly sliced
  • hot pepper sauce, to taste

Instructions:

  1. Combine egg whites, black beans, tomato, queso fresco and black pepper in medium bowl
  2. Spray medium nonstick pan with nonstick spray; heat over medium heat. Pour egg mixture into pan.
  3. Cook for 3 to 4 minutes until set but sill moist, lifting edges occasionally to allow uncooked egg mixture to flow to the bottom of the pan, until cooked through; remove from heat. Remove eggs from pan and cut into quarters.
  4. Top telera-style bread with egg, remaining cheese and sliced avocado, dividing evenly. Season with hot pepper sauce to taste.
