Recipe Description:

Spice up dinner with a side of these savory AvoTaco Boats fueled by plant power. Broiled avocado halves feature a tasty combination of cauliflower and walnuts, easily prepped before dinner or even the day before. Add this to the menu especially if working on managing weight. Fiber-containing foods like avocados, help provide a feeling of fullness but with fewer calories.

Ingredients:

  • 2 cups cauliflower florets, trimmed and rinsed
  • 1 cup walnuts, chopped
  • 4 Tbsp. lime juice, divided
  • 0.5 oz. taco seasoning (1/2 of a 1 oz. package)
  • 1/2 tsp. sea salt
  • 4 ripe, fresh avocados, halved, pitted and peeled
  • 8 tsp. homestyle salsa

Instructions:

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a food processor, pulse cauliflower until finely chopped. Add walnuts and process until mixture is finely chopped. Add 1 Tbsp. lime juice, taco seasoning, and salt and process until well blended.
  3. Spread mixture onto baking sheet. Bake for 20 minutes, stirring halfway through. Remove from oven and set aside.
  4. Sprinkle avocado halves with remaining lime juice. Fill each avocado half with about 1/4 cup of the cauliflower mixture. Place on baking sheet with the pit side facing up.
  5. Preheat oven to broil. Broil AvoTaco boats for 1 to 2 minutes until they just start to brown. Remove from broiler and top with salsa.

Notes & Tips:

Taco mixture can be made ahead and stored in an airtight container in the refrigerator for up to 3 days until ready to use.
