Broiled avocado halves feature a tasty combination of cauliflower and walnuts, easily prepped before dinner or even the day before. Add this to the menu especially if working on managing weight. Fiber-containing foods like avocados, help provide a feeling of fullness but with fewer calories.

Ingredients:
- 2 cups cauliflower florets, trimmed and rinsed
- 1 cup walnuts, chopped
- 4 Tbsp. lime juice, divided
- 0.5 oz. taco seasoning (1/2 of a 1 oz. package)
- 1/2 tsp. sea salt
- 4 ripe, fresh avocados, halved, pitted and peeled
- 8 tsp. homestyle salsa
Instructions:
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- In a food processor, pulse cauliflower until finely chopped. Add walnuts and process until mixture is finely chopped. Add 1 Tbsp. lime juice, taco seasoning, and salt and process until well blended.
- Spread mixture onto baking sheet. Bake for 20 minutes, stirring halfway through. Remove from oven and set aside.
- Sprinkle avocado halves with remaining lime juice. Fill each avocado half with about 1/4 cup of the cauliflower mixture. Place on baking sheet with the pit side facing up.
- Preheat oven to broil. Broil AvoTaco boats for 1 to 2 minutes until they just start to brown. Remove from broiler and top with salsa.
