Protein Energy Balls with Avocado

Craving something sweet that actually loves you back? Make a batch of these avocado energy balls for a tasty boost of healthy fats, fiber, and protein. They’re the perfect pick-me-up for your afternoon snack break.

Ingredients:

  • For the Chocolate Covered Almond Balls:

  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 1/3 cup creamy peanut butter
  • 3 Tbsp. maple syrup
  • 1/4 tsp. salt
  • 1 1/2 cup raw rolled oats
  • 2 Tbsp. mini chocolate chips

Instructions:

  1. Add the avocado, nut butter, maple syrup, and vanilla (if using) to a food processor and pulse until it forms a smooth paste.
  2. Add the oats and pulse until dough forms.
  3. Add the chocolate chips and pulse to combine.
  4. Use a tablespoon to scoop out bite-size pieces and roll in your hands. Keep rolling balls until all the dough is used up. (Should make about 14 balls).
  5. Store in the fridge in an airtight container.

Notes & Tips:

Depending on the consistency of your nut butter, you may need to add a couple of extra tablespoons of oats if it is too sticky to roll. If it’s too dry, add a tablespoon or two of water and pulse again until the dough sticks together.

Additional Flavor Variations:
Use the original recipe above with these substitutions:

Chocolate Covered Almond Balls:
Use almond butter in place of the peanut butter
Add 1 Tbsp. cocoa powder and ¼ tsp. almond extract
Omit the chocolate chips

Oatmeal Raisin Balls:
Use cashew butter in place of the peanut butter
Add 1 ½ tsp. ground cinnamon and 1 tsp. vanilla extract
Omit the chocolate chips and replace with ¼ cup raisins
