Ingredients:
For the Chocolate Covered Almond Balls:
- 1 ripe, fresh avocado, halved, pitted and peeled
- 1/3 cup creamy peanut butter
- 3 Tbsp. maple syrup
- 1/4 tsp. salt
- 1 1/2 cup raw rolled oats
- 2 Tbsp. mini chocolate chips
Instructions:
- Add the avocado, nut butter, maple syrup, and vanilla (if using) to a food processor and pulse until it forms a smooth paste.
- Add the oats and pulse until dough forms.
- Add the chocolate chips and pulse to combine.
- Use a tablespoon to scoop out bite-size pieces and roll in your hands. Keep rolling balls until all the dough is used up. (Should make about 14 balls).
- Store in the fridge in an airtight container.

Use the original recipe above with these substitutions:
Chocolate Covered Almond Balls:
Use almond butter in place of the peanut butter
Add 1 Tbsp. cocoa powder and ¼ tsp. almond extract
Omit the chocolate chips
Oatmeal Raisin Balls:
Use cashew butter in place of the peanut butter
Add 1 ½ tsp. ground cinnamon and 1 tsp. vanilla extract
Omit the chocolate chips and replace with ¼ cup raisins
