Ingredients:

  • 1 ripe, fresh avocado, halved, pitted and peeled
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 3-4 Tbsp. water
  • Salt and pepper to taste

Instructions:

  1. Combine the avocado, lemon juice, lemon zest and 3 Tbsp of water in the bowl of a small food processor or blender. Blend until creamy.
  2. Add more water if the sauce is too thick until you reach your desired consistency.
  3. Season to taste with salt and pepper.

Notes & Tips:

This avocado sauce can be made ahead and served chilled. It can be stored in the refrigerator in an air-tight container for up to 3 days.

It pairs beautifully with grilled vegetables for a delicious side dish.
