Ingredients:
- 6 ripe, fresh avocados, halved, pitted, peeled and diced
- 2 fresh limes, juice only
- 1/2 cup cilantro leaves, chopped
- 1 cup corn kernels
- 1 red bell pepper, cored, seeded and diced
- 1 red onion, diced
- 1 cup Jalapeño-Jack cheese, grated
- 1 tsp. hot sauce (or to taste)
- 1 tsp. salt (or to taste)
Instructions:
- Mash avocado chunks with lime juice in large bowl.
- Add cilantro, corn, bell pepper, onion, cheese, hot sauce, and salt. Combine well.
- Taste, and adjust seasonings with more salt and hot sauce if desired.
- Serve with tortilla chips for dipping.
