Ingredients:
- 2 ripe, fresh avocados, halved, pitted and peeled (about 8 oz.)
- 1 Tbsp. fresh lemon juice
- 1/2 cup red bell pepper, finely diced
- 1/2 cup grape tomatoes, quartered
- 1/4 cup white onion, finely chopped
- 2 garlic cloves, finely chopped
- 1/2 tsp. fresh thyme leaves, chopped, or a scant 1/4 teaspoon dried thyme
- 1/2 tsp. salt
- 1/4 tsp. cayenne pepper (or to taste)
Instructions:
- In a large mixing bowl, coarsely mash avocados, leaving some chunks
- stir in lemon juice.
- Gently fold in red pepper, tomatoes, onion, garlic, thyme, salt, and cayenne.
- To store, place a piece of plastic wrap directly on the surface of the guacamole and refrigerate.
