Ingredients:

  • 3 ripe, fresh avocados, halved, pitted and peeled
  • 1/4 cup red onion, finely diced
  • 1/2 - 1 Jalapeno pepper, minced (1-2 Tbsp., adjust amount based on desired spiciness)
  • 1/4 tsp salt
  • Juice of 2 limes (approximately 2 Tbsp.)
  • 1 ripe Roma tomato, seeded and diced
  • 1/2 cup fresh cilantro leaves, chopped
  • Salt and pepper to taste
  • Additional cilantro for ganish, optional

Instructions:

  1. Place the finely diced onion and minced jalapeno in the bottom of a medium-sized mixing bowl and sprinkle with 1/4 tsp salt.
  2. Using the back of a fork, gently mash the onion and jalapeño together with the salt to release the juices.
  3. Scoop out the avocados into the bowl, add the lime juice, and mash the avocados with the fork to a creamy consistency, combining the avocado with the onions & jalapeño.
  4. Fold in the diced tomato and chopped cilantro leaves, adjust seasoning with salt and pepper to taste.
  5. Garnish with fresh cilantro leaves if desired.
