Ingredients:
- 3 ripe, fresh avocados, halved, pitted and peeled
- 1/4 cup red onion, finely diced
- 1/2 - 1 Jalapeno pepper, minced (1-2 Tbsp., adjust amount based on desired spiciness)
- 1/4 tsp salt
- Juice of 2 limes (approximately 2 Tbsp.)
- 1 ripe Roma tomato, seeded and diced
- 1/2 cup fresh cilantro leaves, chopped
- Salt and pepper to taste
- Additional cilantro for ganish, optional
Instructions:
- Place the finely diced onion and minced jalapeno in the bottom of a medium-sized mixing bowl and sprinkle with 1/4 tsp salt.
- Using the back of a fork, gently mash the onion and jalapeño together with the salt to release the juices.
- Scoop out the avocados into the bowl, add the lime juice, and mash the avocados with the fork to a creamy consistency, combining the avocado with the onions & jalapeño.
- Fold in the diced tomato and chopped cilantro leaves, adjust seasoning with salt and pepper to taste.
- Garnish with fresh cilantro leaves if desired.
