This fruit-packed, icy-cold version offers a twist on the traditional horchata.

Ingredients:
- 1 1/2 cups water
- 1/2 cup rice, long grain
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
- 3 cups pineapple tidbits, frozen
- 1 tsp. vanilla extract
- 1 Tbsp. coconut flakes, unsweetened
- Sugar to taste (optional)
Instructions:
- Combine water and rice in blender and puree for 1 minute until rice grains are broken. Place rice water in refrigerator for 2 hours or overnight. Strain rice water reserving liquid portion.
- Combine strained rice water, avocado, pineapple and vanilla in blender and puree until smooth, mixture will be thick.
- Pour mixture into four glasses and top with shredded coconut and additional pieces of pineapple and avocado if desired.
