Ingredients:
- 1/4 cup flat leaf parsley, chopped
- 2 Tbsp. fresh lemon juice (juice of 1 large lemon)
- 1 tsp. freshly-grated lemon zest (zest of 1 large lemon)
- 2 Tbsp. extra virgin olive oil
- 1/2 tsp. celery seed
- Pinch of red pepper flakes (optional)
- 1/2 tsp. salt
- Freshly ground black pepper to taste
- 2 large cucumbers, sliced into half-moons approx ¼-inch thick
- 1 large ripe, fresh avocado, halved, pitted, peeled and diced
Instructions:
- In a large glass (non-reactive) bowl, combine parsley, lemon juice, lemon zest, olive oil, celery seed, red pepper flakes, salt & pepper and whisk together to make a dressing.
- Add the sliced cucumbers and toss to coat.
- Gently fold in diced avocado and serve immediately, or keep refrigerated in an air-tight container for up to 2 days.
