Recipe Description:

This nutritious & easy side salad comes together in just minutes and will be a hit at your next barbeque or picnic. The crunch of fresh cucumbers combined with the creaminess of avocados, all tied together with vibrant lemon juice, cooling celery seed & a dash of spice from red pepper flakes makes for a perfectly-balanced dish that is ideal for hot summer days.

Ingredients:

  • 1/4 cup flat leaf parsley, chopped
  • 2 Tbsp. fresh lemon juice (juice of 1 large lemon)
  • 1 tsp. freshly-grated lemon zest (zest of 1 large lemon)
  • 2 Tbsp. extra virgin olive oil
  • 1/2 tsp. celery seed
  • Pinch of red pepper flakes (optional)
  • 1/2 tsp. salt
  • Freshly ground black pepper to taste
  • 2 large cucumbers, sliced into half-moons approx ¼-inch thick
  • 1 large ripe, fresh avocado, halved, pitted, peeled and diced

Instructions:

  1. In a large glass (non-reactive) bowl, combine parsley, lemon juice, lemon zest, olive oil, celery seed, red pepper flakes, salt & pepper and whisk together to make a dressing.
  2. Add the sliced cucumbers and toss to coat.
  3. Gently fold in diced avocado and serve immediately, or keep refrigerated in an air-tight container for up to 2 days.

Notes & Tips:

You can make this salad ahead of time and chill in the refrigerator until serving and the lemon juice will preserve the avocados to help reduce oxidization (prevent them from turning brown quickly). And using a non-reactive (glass) bowl for mixing & storing this salad instead of a metal bowl will prevent the acid of the lemon juice from giving the salad a metallic flavor.
