Ingredients:
- 1 1/2 ripe, fresh avocados, pitted, and peeled
- 3/4 cup non-fat vanilla Greek yogurt
- 1 1/2 cups blueberries
- 3 Tbsp. dark chocolate chips, melted (or 1 1/2 oz. dark chocolate bar, chopped) - optional
Instructions:
- Add the avocado and yogurt to a blender and puree until smooth. Transfer to a mixing bowl and add the blueberries. Stir well until the blueberries are coated in the avocado-yogurt mixture.
- Use an ice cream scoop to spoon the blueberry mixture onto a baking sheet lined with parchment paper. Freeze for 2 hours or until firm.
- If adding chocolate: Add the dark chocolate chips to a bowl and microwave for 1 ½ minutes, stopping occasionally to stir, until the chocolate chips are melted. Drizzle the melted chocolate over the yogurt clusters and put them back in the freezer for 30 minutes or until the chocolate is firm.
Notes & Tips:
For added crunch, mix ½ cup chopped nuts into the yogurt mixture before freezing.
This recipe also works well with chopped strawberries or fresh raspberries in place of the blueberries.
