Start your morning with this fresh and satisfying Avocado Breakfast Salad made with creamy avocados, soft-boiled eggs, arugula, juicy tomatoes, and parmesan cheese. This easy avocado breakfast recipe provides a delicious combination of flavor and wholesome ingredients to help fuel your day.

Ingredients:

  • For the Salad:

  • 4 large eggs
  • 4 cups arugula
  • 1 cup cherry tomatoes, halved
  • 6 Tbsp. shredded parmesan cheese
  • 4 Tbsp. pumpkin seeds, unsalted
  • 2 ripe, fresh avocados, halved, pitted, peeled, and sliced
  • For the Lemon Avocado Dressing (Makes 1 cup):

  • 1 ripe, fresh avocado, halved, pitted, and peeled
  • 1/2 Tbsp. olive oil
  • 1 1/2 Tbsp. lemon juice
  • 1 Tbsp. white wine vinegar
  • 2 tsp. Dijon mustard
  • 1/4 tsp. salt
  • 1/4 tsp. lemon zest
  • 3/4 cup water

Instructions:

  1. Bring a pot of water to a boil and add the eggs. Reduce to a simmer and cook for 7 ½ minutes. Transfer to a bowl of ice water to chill.
  2. Add all of the dressing ingredients to a blender and puree until smooth.
  3. Assemble each salad with1 cup arugula, 1 egg, ¼ cup halved tomatoes, 1 ½ tablespoons parmesan, 1 tablespoon pumpkin seeds, and ½ sliced avocado. Top with 2 tablespoons of dressing.

Notes & Tips:

Meal Prep: cut down on cooking time in the morning by making your eggs and dressing in advance and store in the fridge until you are ready to assemble your salad.

Leftover dressing can be stored in an airtight container in the refrigerator for 3-4 days.
