For the Salad:
- 4 large eggs
- 4 cups arugula
- 1 cup cherry tomatoes, halved
- 6 Tbsp. shredded parmesan cheese
- 4 Tbsp. pumpkin seeds, unsalted
- 2 ripe, fresh avocados, halved, pitted, peeled, and sliced
For the Lemon Avocado Dressing (Makes 1 cup):
- 1 ripe, fresh avocado, halved, pitted, and peeled
- 1/2 Tbsp. olive oil
- 1 1/2 Tbsp. lemon juice
- 1 Tbsp. white wine vinegar
- 2 tsp. Dijon mustard
- 1/4 tsp. salt
- 1/4 tsp. lemon zest
- 3/4 cup water
Instructions:
- Bring a pot of water to a boil and add the eggs. Reduce to a simmer and cook for 7 ½ minutes. Transfer to a bowl of ice water to chill.
- Add all of the dressing ingredients to a blender and puree until smooth.
- Assemble each salad with1 cup arugula, 1 egg, ¼ cup halved tomatoes, 1 ½ tablespoons parmesan, 1 tablespoon pumpkin seeds, and ½ sliced avocado. Top with 2 tablespoons of dressing.
Notes & Tips:
Leftover dressing can be stored in an airtight container in the refrigerator for 3-4 days.
