Treat your family to a deliciously refreshing and nourishing snack with this frozen yogurt bark! Perfect for all ages, this easy-to-make recipe combines fresh ingredients into a satisfying and nutritious treat.

Ingredients:

  • 2 cups plain nonfat Greek yogurt
  • 2 ripe, fresh avocados, halved, pitted, peeled & mashed (Plus more avocado for serving, if desired)
  • 2 Tbsp. honey
  • Juice of 2 limes
  • 1/2 cup fresh strawberry slices
  • 1/2 cup fresh blueberries

Instructions:

  1. Prepare a baking sheet by lining it with parchment paper. Set aside.
  2. In a high-speed blender combine the yogurt, mashed avocados, honey and lime juice. Blend until combined and smooth.
  3. Spread the yogurt-avocado mixture onto the prepared baking sheet using an offset spatula into an even layer.
  4. Sprinkle the yogurt mixture evenly with strawberry slices and blueberries.
  5. Freeze the yogurt bark for at least 4 hours, or overnight.
  6. Remove the yogurt bark from the freezer and break it into large chunks. Serve immediately.
  7. Optional: Garnish each chunk with additional avocado slices before eating.

Notes & Tips:

The toppings are customizable for this recipe – you are free to use the berries suggested, or switch them up for things such as raspberries, blackberries, diced mango, or diced pineapple. You can also add crunch with nuts such as chopped pistachios or almonds before freezing.
