Swap traditional potatoes for creamy mashed avocado to create soft, pillowy gnocchi that pairs perfectly with a zesty avocado cilantro lime sauce. Fresh, flavorful, and completely plant-based, it’s a delicious, unexpected twist on classic comfort food.

Ingredients:

  • 3 ripe, fresh avocados, halved, pitted, peeled, and divided
  • 1 1/4 cup flour, divided
  • 1 pinch sea salt
  • 1 cup spinach, chopped
  • 1/2 cup cilantro, leaves and stems, plus extra 2 Tbsp. leaves for garnish
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 clove garlic
  • 1/4 tsp. chili flakes
  • 1/2 tsp. sea salt
  • 1/2 tsp. black pepper
  • 2-3 Tbsp. water
  • 1/2 cup cherry tomatoes, quartered (optional for garnish)

Instructions:

  1. Make the Gnocchi:

  2. Add 1 avocado into a bowl and mash with the back of a fork until smooth. Add 1 cup of flour and salt and combine until a pliable dough ball forms.
  3. Sprinkle the remaining ¼ cup flour onto a baking sheet (you will put the finished gnocchi there).
  4. On a floured surface, roll out dough into a thin log-shape (about the width of your thumb).
  5. Chop into nickel-sized pieces (gnocchi) and roll each piece on the back of a floured fork to create ridges on the dough. Place pieces on the baking sheet.
  6. Bring a medium-sized pot of water to a boil, as you prepare the sauce.
  1. Make the Sauce:

  2. Add 2 avocados, cilantro, lime juice, olive oil, garlic, chili flakes, salt, and pepper into a blender or food processer.
  3. Blend until it’s a smooth, creamy consistency. Add water as needed for smoother texture.
  1. Assemble:

  2. Boil gnocchi for 5-6 minutes.
  3. Drain gnocchi and add back into pot or serving bowl.
  4. Toss gnocchi with sauce. Top with cherry tomatoes and cilantro leaves.
