Ingredients:
- 3 ripe, fresh avocados, halved, pitted, peeled, and divided
- 1 1/4 cup flour, divided
- 1 pinch sea salt
- 1 cup spinach, chopped
- 1/2 cup cilantro, leaves and stems, plus extra 2 Tbsp. leaves for garnish
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 clove garlic
- 1/4 tsp. chili flakes
- 1/2 tsp. sea salt
- 1/2 tsp. black pepper
- 2-3 Tbsp. water
- 1/2 cup cherry tomatoes, quartered (optional for garnish)
Instructions:
Make the Gnocchi:
- Add 1 avocado into a bowl and mash with the back of a fork until smooth. Add 1 cup of flour and salt and combine until a pliable dough ball forms.
- Sprinkle the remaining ¼ cup flour onto a baking sheet (you will put the finished gnocchi there).
- On a floured surface, roll out dough into a thin log-shape (about the width of your thumb).
- Chop into nickel-sized pieces (gnocchi) and roll each piece on the back of a floured fork to create ridges on the dough. Place pieces on the baking sheet.
- Bring a medium-sized pot of water to a boil, as you prepare the sauce.
Make the Sauce:
- Add 2 avocados, cilantro, lime juice, olive oil, garlic, chili flakes, salt, and pepper into a blender or food processer.
- Blend until it’s a smooth, creamy consistency. Add water as needed for smoother texture.
Assemble:
- Boil gnocchi for 5-6 minutes.
- Drain gnocchi and add back into pot or serving bowl.
- Toss gnocchi with sauce. Top with cherry tomatoes and cilantro leaves.
