Ingredients:
- 1 batch Official Hass Avocado Board Guacamole
- 3 large orange bell peppers
- Additional cilantro springs for garnish
- 2 cups cut veggies, such as carrots, celery and cucumbers, for serving
Instructions:
- Prepare the guacamole.
- Cut the top third off of the peppers and remove the white pith and seeds.
- Using a sharp paring knife, cut out small pieces of pepper to make Jack o’Lantern faces.
- Fill the peppers with the prepared guacamole.
- Serve on a platter with some additional cilantro sprigs for garnish to represent ‘pumpkin vines.’
- Serve with your favorite freshly-cut veggies.
Notes & Tips:
