Avocado, Kale and Quinoa Salad

Ingredients:

  • Salad

  • 1 ripe, fresh avocado, halved, pitted, peeled and diced
  • 4 cups kale, chopped
  • 1/2 cup cooked quinoa
  • 1/2 cup sliced almonds
  • 1/3 cup cucumber, chopped
  • 1/3 cup dried cranberries
  • 1/4 cup goat (or Feta) cheese
  • Dressing

  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 3 Tbsp. lemon juice
  • zest of 1 lemon
  • 1 Tbsp. honey
  • 1/4 tsp. ground black pepper
  • 1/8 tsp. sea salt

Instructions:

  1. Dressing:
  2. Whisk together the olive oil, apple cider vinegar, lemon juice, lemon zest, honey, pepper, and sea salt.
  3. Set aside.
  4. Salad:
  5. In a large bowl, place chopped kale, quinoa, sliced almonds, cucumbers, cranberries and goat cheese. Toss gently.
  6. Next, place avocado on top. Pour dressing on top, and gently toss to combine. Serve and enjoy!
