Ingredients:
Salad
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
- 4 cups kale, chopped
- 1/2 cup cooked quinoa
- 1/2 cup sliced almonds
- 1/3 cup cucumber, chopped
- 1/3 cup dried cranberries
- 1/4 cup goat (or Feta) cheese
Dressing
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 3 Tbsp. lemon juice
- zest of 1 lemon
- 1 Tbsp. honey
- 1/4 tsp. ground black pepper
- 1/8 tsp. sea salt
Instructions:
- Dressing:
- Whisk together the olive oil, apple cider vinegar, lemon juice, lemon zest, honey, pepper, and sea salt.
- Set aside.
- Salad:
- In a large bowl, place chopped kale, quinoa, sliced almonds, cucumbers, cranberries and goat cheese. Toss gently.
- Next, place avocado on top. Pour dressing on top, and gently toss to combine. Serve and enjoy!
