This smoothie parfait combines the best of a smoothie bowl and a Greek yogurt parfait to make one perfect, gut-friendly dish.

Ingredients:
- 1 ripe, fresh avocado, halved, pitted and peeled
- 2 Tbsp. chia seeds
- 1 frozen banana, broken in half
- 1/2 cup frozen pineapple chunks
- Handful of baby spinach leaves
- 3-4 Tbsp. water, as needed
- 1/2 cup nonfat plain Greek yogurt
- 1/2 cup fresh mixed berries
Optional toppings:
- Sliced banana
- Ripe, fresh avocado slices
- Additional berries
Instructions:
Make the Smoothie
- Combine the avocado, chia seeds, frozen banana, frozen pineapple and spinach in a blender and blend on high speed, scraping down the sides as necessary, until smooth. Add water, 1 Tbsp. at a time, as needed until desired consistency is reached. The mixture should be thick enough to eat with a spoon. Set aside.
Compile the Parfait
- In a 1-cup mason jar, place ¼ cup of the mixed berries in the bottom, then spoon ¼ cup of the plain Greek yogurt over the berries and top the yogurt with half of the smoothie mixture.
- If desired, garnish with sliced bananas, sliced avocado, and/or additional berries. Serve immediately or cover and refrigerate overnight before serving (note: if refrigerated, the smoothie will lose some of its thickness but will still taste delicious!)
