Avocado Smoothie Parfait

Recipe Description:

This smoothie parfait combines the best of a smoothie bowl and a Greek yogurt parfait to make one perfect, gut-friendly dish.

Ingredients:

  • 1 ripe, fresh avocado, halved, pitted and peeled
  • 2 Tbsp. chia seeds
  • 1 frozen banana, broken in half
  • 1/2 cup frozen pineapple chunks
  • Handful of baby spinach leaves
  • 3-4 Tbsp. water, as needed
  • 1/2 cup nonfat plain Greek yogurt
  • 1/2 cup fresh mixed berries
  • Optional toppings:

  • Sliced banana
  • Ripe, fresh avocado slices
  • Additional berries

Instructions:

  1. Make the Smoothie

  2. Combine the avocado, chia seeds, frozen banana, frozen pineapple and spinach in a blender and blend on high speed, scraping down the sides as necessary, until smooth. Add water, 1 Tbsp. at a time, as needed until desired consistency is reached. The mixture should be thick enough to eat with a spoon. Set aside.
  1. Compile the Parfait

  2. In a 1-cup mason jar, place ¼ cup of the mixed berries in the bottom, then spoon ¼ cup of the plain Greek yogurt over the berries and top the yogurt with half of the smoothie mixture.
  3. If desired, garnish with sliced bananas, sliced avocado, and/or additional berries. Serve immediately or cover and refrigerate overnight before serving (note: if refrigerated, the smoothie will lose some of its thickness but will still taste delicious!)

Notes & Tips:

You can boost the nutritional content by adding protein powder, flaxseeds and/or hemp seeds to the smoothie mixture.
