Cheesy Avocado Flatbread with Mushrooms

Recipe Description:

Simple, delicious and nutritious! Made in under 20 minutes, this flatbread is sure to impress as a quick meal or snack at your next get-together. The unexpected, yet the star-of-the-recipe ingredient – fresh avocados – adds smooth texture and great taste. Avocado is also a good source of fiber, which helps keep you full and satisfied longer.

  • Recipe serving size: 1/2 flatbread

Ingredients:

  • 1 ripe, fresh avocado, halved, pitted, peeled and mashed
  • 1/2 tsp. garlic, minced
  • 1 Tbsp. lime juice
  • 1 large flatbread (16-inch length)
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup mushrooms, sautéed
  • Salt & pepper to taste

Instructions:

  1. In a medium bowl, mash avocado and mix together with garlic and lime juice.
  2. Spread mashed avocado evenly over flatbread and top with shredded cheese and mushrooms.
  3. Season with a pinch of salt and pepper, as desired.
  4. Bake at 400 F for 7-8 minutes, or until cheese has melted and edges of flatbread are toasted. Slice and enjoy.
