Ingredients:

  • 1 large Portobello mushroom cap, stem removed
  • 1/2 tsp olive oil (optional)
  • 1/4 cup grated Parmesan cheese
  • 1/2 ripe, fresh avocado, halved, pitted, peeled, and sliced or mashed
  • Fresh rosemary leaves for garnish
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (or preheat a grill to medium-high heat).
  2. Brush the Portobello cap lightly with olive oil (optional) and place it on a baking sheet or grill grate.
  3. Bake or grill for 12–15 minutes, or until the mushroom is tender and juicy.
  4. While the mushroom is still warm, sprinkle Parmesan cheese over the inside of the cap, allowing it to melt slightly.
  5. Top with avocado slices or a layer of mashed avocado.
  6. Season with salt and pepper to taste
  7. Garnish with fresh rosemary.
  8. Serve warm and enjoy!
