Ingredients:
- 1 ½ ripe, fresh avocados, halved, pitted
- 3 medium extra ripe bananas
- ⅓ cup unsweetened applesauce
- ⅓ cup granulated sugar
- 1 tsp. vanilla extract
- 2 large eggs
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- ¾ cup walnuts, chopped (plus extra for garnish, optional)
Instructions:
- Preheat the oven to 350 degrees Fahrenheit and line a standard 1 lb. loaf pan with parchment paper.
- Add the avocado, bananas, applesauce, sugar, vanilla, and eggs to a blender and puree until smooth.
- In a large mixing bowl, whisk together the whole wheat flour, all purpose flour, baking soda, baking powder, ground cinnamon, and salt.
- Add the avocado mixture to the dry ingredients in the mixing bowl. Stir with a wooden spoon just until combined. Add the walnuts and stir to distribute through the batter.
- Pour batter into the prepared loaf pan. Bake for 50-60 minutes or until golden brown and a toothpick inserted into the center of the loaf comes out mostly clean.
- Allow to cool 15 minutes in the pan then use the parchment to lift out of the pan and transfer to a cooling rack to cool the rest of the way before slicing.
Notes & Tips:
Quick Tip: Keep leftover avocado fresh by leaving the skin and pit intact, adding a squeeze of lemon or lime juice, and wrapping it tightly. Refrigerate for up to 3 days. If some browning occurs, simply scrape off the thin brown layer and enjoy the rest!
