This simple recipe requires less than 10 ingredients and can be made quickly in an Instant Pot® to save time! A creamy avocado sauce pairs perfectly with rice and chicken for a fast dinner meal that can be enjoyed or saved for later for easy meal prep. Plus, feel good knowing it contains fiber from fresh avocados. Fiber helps slow digestion which prevents rapid rises in blood glucose following a meal.

Ingredients:
- 2 Tbsp. olive oil
- 2 tsp. garlic, minced and divided
- 16 oz. chicken breast, raw, boneless, skinless
- 2 cups chicken stock, low sodium
- 1 cup long-grain rice, rinsed and drained
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
- 1/4 cup lime juice
- 1/2 tsp. chili powder
- 1/8 tsp. salt
- 1/8 tsp. pepper
Instructions:
- Set a 6 qt. Instant Pot® to sauté on high heat.
- Add oil, 1 tsp. garlic, salt and pepper, and then add chicken. Sauté, stirring occasionally for 5 minutes.
- With the chicken remaining in the pressure cooker, add chicken broth and rice and stir to combine, ensuring the rice is fully submerged in the liquid. Cover and cook on manual high pressure for 10 minutes then quick release remaining pressure.
- While Instant Pot is cooking, prepare the avocado sauce in a high-speed blender or food processor. Add diced avocado, remaining garlic, lime juice, chili powder, pepper and salt and blend until smooth.
- When the Instant Pot has finished releasing the pressure, open the lid and stir in the avocado lime sauce.
