Ingredients:

  • 1 1/2 lb. salmon fillet
  • 2 ripe, fresh avocado, halved, pitted, peeled and divided
  • 2 cloves garlic, minced
  • 1 Tbsp. lemon juice
  • 1/2 tsp. ground cumin
  • 1/2 tsp. salt, divided
  • 2 cups cherry tomatoes, cut in half
  • 1/4 cup green onion, diced
  • 1 Tbsp. cilantro, chopped

Instructions:

  1. Place 1/2 avocado, garlic, lemon juice, cumin and 1/4 teaspoon salt in small bowl; mash to form avocado paste. Spread avocado mixture onto salmon filet, covering evenly; refrigerate for at least 30 minutes.
  2. Wrap salmon and tomatoes in large piece of aluminum foil and grill over medium heat for 10 to 12 minutes, until cooked through.
  3. Transfer salmon and tomatoes on serving platter and top with remaining avocados, green onions, 1/4 teaspoon salt and cilantro.
