Ingredients:
- 1 1/2 lb. salmon fillet
- 2 ripe, fresh avocado, halved, pitted, peeled and divided
- 2 cloves garlic, minced
- 1 Tbsp. lemon juice
- 1/2 tsp. ground cumin
- 1/2 tsp. salt, divided
- 2 cups cherry tomatoes, cut in half
- 1/4 cup green onion, diced
- 1 Tbsp. cilantro, chopped
Instructions:
- Place 1/2 avocado, garlic, lemon juice, cumin and 1/4 teaspoon salt in small bowl; mash to form avocado paste. Spread avocado mixture onto salmon filet, covering evenly; refrigerate for at least 30 minutes.
- Wrap salmon and tomatoes in large piece of aluminum foil and grill over medium heat for 10 to 12 minutes, until cooked through.
- Transfer salmon and tomatoes on serving platter and top with remaining avocados, green onions, 1/4 teaspoon salt and cilantro.
