Ingredients:

  • 2 Tbsp. vegetable oil
  • 2 cups fresh corn kernels, cut from cob
  • 1/4 tsp. coarse kosher salt
  • 2 Tbsp. mayonnaise
  • 2 oz. Cotija cheese, crumbled
  • 1/2 cup fresh scallions, tops and bulb, thinly sliced
  • 1/2 cup fresh cilantro leaves, roughly chopped
  • 1 jalapeño pepper, seeded and diced
  • 1 garlic clove, peeled and diced
  • 1 Tbsp. fresh lime juice
  • 1 tsp. chili blend powder seasoning
  • 1 ripe, fresh avocado, halved, pitted, peeled and sliced

Instructions:

  1. Heat oil in a large wok or nonstick pan over high heat.
  2. Add corn kernels and salt and toss one or twice to combine. Cook, without stirring until corn begins to char on first side, about 2 minutes.
  3. Toss the corn, stir, and repeat until charred on a second side, about 2 minutes longer. Continue tossing and charring until the corn is evenly charred, about 10 minutes total.
  4. Transfer corn into a large bowl. Add mayonnaise, cheese, scallions, cilantro, jalapeño, garlic, lime juice and chili powder to taste and toss to combine. Taste and adjust the seasoning with salt and more chili powder if desired.
  5. Top with sliced avocado arranged in a spiral pattern. Serve hot or at room temperature.
