Ingredients:
- 12 3-inch whole-wheat tortillas
- 3/4 cup reduced-sodium vegetarian refried beans
- 1/2 cup Cheddar cheese, grated
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
- 1/4 cup mild salsa, store-bought (optional)
Instructions:
- Preheat oven to 425° F. Spray twelve 2 1/2-inch muffin cups with non-stick cooking spray.
- Place one tortilla into each muffin cup, pressing gently into the bottom and up the sides to form a tortilla cup. Bake for 8 to 10 minutes until light golden brown and crisp. Remove from oven and cool.
- Fill each tortilla cup with refried beans and cheese, dividing ingredients evenly. Return to oven for 2 minutes and bake until cheese is melted. Top with avocado and salsa, dividing ingredients evenly.
