Ingredients:

  • 2 whole wheat bolillo rolls, cut in half lengthwise and toasted
  • 1/2 cup low-fat 1% cottage cheese
  • 1 ripe, fresh avocado, halved, pitted, peeled and sliced
  • 2 Tbsp. pumpkin seeds
  • 1 tsp. fresh lime juice
  • 1/4 tsp. fresh ground black pepper

Instructions:

  1. Top toasted bolillo roll halves with cottage cheese, sliced avocado, pumpkin seeds, lime and pepper dividing evenly. Add additional toppings if desired.
