- 2 whole wheat bolillo rolls, cut in half lengthwise and toasted
- 1/2 cup low-fat 1% cottage cheese
- 1 ripe, fresh avocado, halved, pitted, peeled and sliced
- 2 Tbsp. pumpkin seeds
- 1 tsp. fresh lime juice
- 1/4 tsp. fresh ground black pepper
