Recipe Description:

Next time you’re mixing up a batch of overnight oats, add avocado! You’ll be giving it a boost of a variety of essential nutrients from healthy fats to fiber, vitamin K, and folate.

Servings:

  • Recipe serving size: ¾ cup overnight oats
  • Number of servings:

Ingredients:

  • 1 ripe, fresh avocado, halved, pitted, and peeled
  • 1 small banana
  • 1 1/2 cups skim milk (or sub with plant-based milk)
  • 1 Tbsp. maple syrup
  • 1 tsp. vanilla extract
  • Dash of salt
  • 1 cup old-fashioned rolled oats
  • 2 Tbsp. chia seeds (optional)
  • 1/2 cup chopped strawberries, for serving
  • 2 Tbsp. pumpkin seeds, for serving

Instructions:

  1. Add the avocado, banana, milk, maple syrup, vanilla extract, and salt to a small blender and puree until smooth.
  2. Add the oats and chia seeds (if using) to a bowl or airtight container and stir in the avocado puree. Top with a lid and chill overnight.
  3. Divide oats into two bowls or glasses and garnish with desired toppings like fresh fruit and nuts.

Notes & Tips:

The topping options for these oats are endless, so you can mix and match the ones that sound good to you. Here are a few suggestions: fresh fruit (berries, banana, pomegranate, apples, pear, etc), nuts, seeds, nut butter, hemp hearts, chia seeds, granola, or cereal.
