Family-style pasta salad that lets kids get creative with their meal!

Ingredients:

  • 1/2 lb whole wheat rotini, dried
  • 1 tsp olive oil
  • 1/2 cup Italian salad dressing
  • 1/2 cup water
  • 2 fresh avocados, halved, pitted, peeled and 1 ½ diced for topping; ½ for dressing
  • 1 fresh carrot, peeled, shredded or spiralized
  • 1 fresh red bell pepper, fresh, sliced or diced
  • 1 cup corn kernels
  • 1 cup green peas
  • 1 15.5 oz can kidney beans, drained and rinsed

Instructions:

  1. Cook pasta according to package directions (omitting salt). Drain and rinse.
  2. Place cooked pasta in a large bowl and coat with olive oil to prevent sticking.
  3. Refrigerate until completely cooled.
  4. Puree salad dressing, water and ½ avocado in a food processor or blender.
  5. In a large bowl, combine pasta and avocado dressing.
  1. Serving Instructions:

  2. Serve family-style with prepared vegetables, diced avocados and beans in separate bowls to allow for self-service. Alternatively, mix all ingredients together and serve.
