Family-style pasta salad that lets kids get creative with their meal!

Ingredients:
- 1/2 lb whole wheat rotini, dried
- 1 tsp olive oil
- 1/2 cup Italian salad dressing
- 1/2 cup water
- 2 fresh avocados, halved, pitted, peeled and 1 ½ diced for topping; ½ for dressing
- 1 fresh carrot, peeled, shredded or spiralized
- 1 fresh red bell pepper, fresh, sliced or diced
- 1 cup corn kernels
- 1 cup green peas
- 1 15.5 oz can kidney beans, drained and rinsed
Instructions:
- Cook pasta according to package directions (omitting salt). Drain and rinse.
- Place cooked pasta in a large bowl and coat with olive oil to prevent sticking.
- Refrigerate until completely cooled.
- Puree salad dressing, water and ½ avocado in a food processor or blender.
- In a large bowl, combine pasta and avocado dressing.
Serving Instructions:
- Serve family-style with prepared vegetables, diced avocados and beans in separate bowls to allow for self-service. Alternatively, mix all ingredients together and serve.
