Snapper with Avocado Guasacaca Salsa

A Venezuelan-style salsa made with avocado, green bell peppers and red wine vinegar give this dish its zippy flavor.

Ingredients:

  • 4 (6 oz.) snapper fillets (or other white fish such as cod)
  • 1 Tbsp. olive oil
  • 1/2 tsp. ground black pepper
  • 1 tsp. salt, divided
  • 1 ripe, fresh avocado, halved, pitted, peeled and finely diced
  • 1/2 cup green bell pepper, finely diced
  • 1/4 cup onion, finely diced
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. cilantro, chopped

Instructions:

  1. Season snapper fillets with olive oil, pepper and 1/2 teaspoon salt.
  2. Combine avocado, bell pepper, onion, red wine vinegar, cilantro and remaining salt in medium bowl; set aside.
  3. Wrap snapper fillets in large piece of aluminum foil and grill over medium heat for 6 to 8 minutes, turning once, until cooked through.
  4. Transfer snapper fillets on serving platter and top with avocado mixture.
