Ingredients:
For the Pink Layer:
- 1/2 cup unsweetened soy milk (or your milk of choice)
- 1/2 cup frozen pink dragon fruit
- 1/3 cup frozen pineapple chunks
For the Green layer:
- 3/4 cup unsweetened soy milk (or your milk of choice)
- 1 cup fresh baby spinach
- 1 banana
- 1 ripe, fresh avocado, pitted, and peeled
- 1/2 cup frozen pineapple chunks
- Juice from 1 lime (about 2 Tbsp)
- 1 teaspoon honey, optional
Instructions:
Make the Pink Layer:
- Add the dragon fruit, pineapple, and milk to a blender and puree until smooth. Transfer to a glass and rinse the blender out to make the green smoothie.
Make the Green Layer:
- Add the milk, spinach, banana, pineapple, avocado, lime juice, and honey to a blender and puree until smooth.
To Serve:
- Layer the pink and green smoothie mixtures into 2 glasses. Add about ¼ cup of each color to the glass at a time to create the swirl pattern.
Notes & Tips:
Add a scoop of your favorite protein powder to the green layer of this smoothie if you want more protein.
If pink dragon fruit is unavailable, you can substitute with frozen strawberries or raspberries for a similar vibrant color and fruity flavor. Strawberries will provide a slightly sweeter taste, while raspberries will add a bit more tartness to balance the smoothie.
